Drying Herbs

When you have an abundance of fresh herbs whether they are store bought or from the garden, don't let them go to waste. Why not dry them so you can have them for the months when they are not readily available.
Ingredients
1 Bunch Coriander
Method
Preheat oven to 150 C or 300 F. Next remove the leaves from the Coriander stems. Cut the roots off and store them in the fridge for later. Place leaves on a piece of baking paper and put on a baking sheet on a lower shelf in the oven not the top as they might brown or burn. Bake for approximately 20 mins but check at the 10 minute mark. The leaves are completely dry when they crumble in between your fingers. If you want the leaves very fine then crumble them a bit more and when cold store in an airtight container in a dark cupboard.
To use sprinkle on dishes or use in place of fresh herbs. Coriander is especially good with fish, in Thai and Indian dishes. Enjoy!
