
Blueberry Bites
vegan, gluten free, dairy free, cane sugar free, wheat free, egg free, soy free
These little Blueberry Bites are for those with a sweet tooth and cousin to the Choc coconut balls. All the nice without the naughty. Who'd have thought it was possible! One bite and you are hooked. I promise.
Makes 12
Ingredients
2/3 cup unsweetened blueberries (I prefer frozen and thawed)
2 tabs organic coconut oil
1/3 cup filtered water
50 grams coconut palm sugar
2 tabs organic coconut flour
Method
Place coconut palm sugar and water in a saucepan on low heat setting until it is reduced down to approximately 1/4 cup and slightly thickened.
Turn heat off and add coconut oil and combine. The coconut oil will melt quickly.
Add blueberries and mash with a fork until the liquid is a beautiful purple colour.
Sift flour into the purple liquid and mix until the mixture thickens. Roll into balls and roll in coconut.
Refrigerate for 20 minutes or until set.
Serve. Yum!
