
Chia Seed Pudding

Have you ever woken up and thought that instead of a standard breakfast that you would much rather enjoy some pudding? But where to find a healthy recipe and what to put in it?
Enter the humble Chia seed. These seeds are an amazing mixture of Omega 3's, calcium, phosphorus, other minerals, a good fibre content and are definitely high on the Super food list. Now whilst there are various Chia Seed recipes around this is my own personal recipe and one that I think you will all enjoy, especially the kids.
Serves 4 to 6 hungry people
Prep time: 10 mins + 2 hours refrigeration
Ingredients
3/4 cup organic Chia Seeds
400mls light coconut cream
1/4 - 1/3 cup organic coconut palm sugar (dependent upon taste)
1 teaspoon organic vanilla essence
400mls almond milk or your preferred type of milk
100mls filtered water
Method
In a large bowl place coconut cream, vanilla essence and coconut palm sugar and whisk until the sugar is dissolved. Next add the chia seeds and whisk again until well combined. Finally add the almond milk and filtered water and mix well. Refrigerate for 2 hours or overnight to allow the chia seeds to soften and absorb all the excess liquids. Serve with fresh fruit, enjoy straight up for a great start to your day or an energising mid afternoon snack.
