Choc Mint Truffles

For those of us that love mint these are the perfect treat. Combined with raw cacao it gives these truffles a chocolatey lift that can only be described as amazing. I have used these little beauties as an Easter treat for my mum who loves everything mint and roses; I'll get to the roses later but for now you need to crank up the food processor and turn out some of these goodies. I'd like to say to share but I'm pretty sure once you try these there will be no sharing.
Makes: about 12 balls Prep time: 3 minutes in the food processor and 10 minutes in the freezer
Ingredients
1 dozen good sized fresh mint leaves
1/3 cup almond meal
2 tablespoons organic raw coconut butter
6 large fresh dates halved and pitted
1.5 tablespoons organic raw cacao powder
Method
Place all ingredients into a food processor and process until mixture forms a ball and all ingredients are fine. Roll into balls or push into moulds and chill in the freezer until very firm. These can be eaten straight from the freezer or fridge. Store in the refrigerator. I would love to be able to tell you they last for two weeks in the fridge but I have never actually kept any for that length of time because they all get eaten within a day or two. Enjoy.
