
Okonomiyaki - Japanese Pancake

So its the end of the week and you want something quick and easy and some way to use up those vegies that aren't as fresh as they could be. This is a great vegetarian meal or side dish that will ensure you're all getting your daily allowance of vegetables. These tasty pancakes are deceptively filling, but don't be surprised if you find people asking for more.
Serves: 4 Prep Time: 35 minutes
Ingredients
4 eggs
2/3 cup of gluten free plain flour
1 red onion finely chopped
1/4 cup frozen peas
1 cup finely chopped cabbage (I use wombok)
Olive oil
1/4 teaspoon Celtic or Himalayan salt
Good pinch of ground black pepper
2 teaspoons of wheat free tamari or soy sauce
1/4 cup finely diced frozen vegies (carrots & beans)
Method
Break eggs into a large bowl and whisk. Sift flour into the egg mixture and whisk until well combined. Add salt and pepper and tamari/soy sauce. Add vegetables and stir with a wooden spoon.
Heat a large frying pan and add olive oil. Once pan is hot turn it down to low. Place large heaped spoons of mixture in the pan and cook until golden brown and then turn the pancakes over to brown the other side.
Serve hot with tamari/soy sauce and/or mayonnaise. Traditionally the Japanese use sweet soy sauce but it contains wheat, and sugar so tamari is a great substitute.
