
Tapenade Pasta

Talk about tucker in a hurry. This has got to be one of my easiest and tastiest recipes yet and it's super good for you. This is the perfect meal for when friends drop in and stay for dinner. Not only are you a good friend but you're a great cook. Well done!
Serves 2 medium or 1 large Prep time: 15 minutes
Ingredients
2 bacon rashers - diced
1 ripe organic tomato - diced
50 grams of fresh rocket (arugula) roughly chopped
100grams San Remo Gluten free Penne pasta
Black Olive Tapenade
1 teaspoon of cold pressed Olive oil
Method
Cook pasta in boiling water for approximately 10 minutes and drain. Set aside. Heat a fry pan and add olive oil and add diced bacon. Cook for approximately 5 minutes. Turn down heat and add Black Olive Tapenade and stir. Cook for 2 minutes and add pasta. Remove pan from heat and add diced tomato and roughly chopped rocket. Serve immediately.
