Choc Coconut Balls
vegan, gluten free, dairy free, cane sugar free, wheat free, egg free, soy free

These tasty little morsels are an extraordinarily healthy and good tasting variation to the old fashioned rum ball. They are also easy and quick to make. By the way a word of warning, you should hide these treats from those without allergies or there won't be any left for those that really need them.
Makes 12
Ingredients
2 tabs Raw Cacao powder
2 tabs organic coconut oil
1/3 cup water
50 grams coconut palm sugar
2 tabs organic coconut flour
Method
Place coconut palm sugar and water in a saucepan on low heat setting until it is reduced down to approximately 1/4 cup and slightly thickened.
Turn heat off and add coconut oil and combine. The coconut oil will melt quickly.
Sift coconut flour and raw cacao powder into the sugar and coconut oil mixture and continue to mix until very thick. At first it seems like the mixture is quite runny but wait a few minutes and the coconut flour will absorb the moisture.
Roll into balls and refrigerate until set, around 20 minutes.
To make these little beauties truly decadent try rolling them in raw cacao powder before serving.
