
Garlic Prawn Salad
gluten free, dairy free, cane sugar free, wheat free, soy free
This recipe will definitely leave you wanting to "throw another prawn on the barbie". It's super quick to prepare and perfect for a warm summer evening or even entertaining guests. And don't be put off by the garlic, there are plenty of greens (loaded with chlorophyll) to combat garlic breath. Besides it tastes so good you just won't care.
Serves 1 or 2 depending on your appetite
Ingredients
1 dozen (12) medium to large raw prawns
1 tablespoon of olive oil
1 large clove of garlic minced (fresh is best)
A good pinch of Celtic salt
1 ripe Roma tomato diced
200gm of roughly chopped salad greens
1/2 a ripe avocado diced
1 small continental cucumber diced
1 good squeeze of fresh lemon juice
Lee's Own Thousand Island Dressing
Method
Combine olive oil, Celtic salt, garlic and prawns in a bowl. Refrigerate and cover for 20 minutes.
In a large bowl combine the diced tomato, cucumber, avocado and roughly chopped salad greens.
Heat a frying pan until hot. Reduce heat, Place marinated prawns in the pan and cook for no more than 3 minutes each side or until they are orange and a little golden. Once cooked remove prawns from the pan and add to salad bowl. Add a good squeeze of lemon juice and toss. Place Garlic Prawn Salad on a serving plate and drizzle with Lee's Own Thousand Island Dressing.
