
Tuna Patties

OK. So these little patties are not the most beautiful dish to serve but don't judge the patties by their looks. They are quick to make and will disappear as fast as they come out of the pan. And I'm pretty sure that they come under the heading of comfort food but they really are good for you and the sweet potato ensures they are good for your blood sugar too, so tuck in.
Serves 4 Prep time 25 minutes
Ingredients
1 medium sized (400 grams) sweet potato
2 spring onions
1 egg
1/4 cup corn flake crumbs
1 x 440 gram tin of tuna in olive oil
salt and pepper to taste
2 tablespoons of olive oil
Method
Dice and boil sweet potato until soft. Drain and puree with a stick mixer or mash until fine. Place in a large bowl. Add egg and corn flake crumbs and season. Finely slice the spring onions and add to the bowl. Drain and flake tuna into the bowl and mix well. Form into balls and flatten. Heat about 2 teaspoons of olive oil in a fry pan and when hot place patties in to the pan and brown on both sides. Repeat the process until all the patties are cooked.
Serve with salad or vegetables.
