
Ginger Salmon with Red and Green Salad

You've had a busy day, you're a little tired and don't want to fuss too much over dinner but you know that dinner should be something easy and takeaway is definitely out of the question. Ingredients
Ginger Salmon
2 x 200gm salmon fillets
1 clove of garlic
1/2cm knob of ginger
2 tablespoons of tamari
1/2 tablespoon of extra virgin olive oil
Method
Place ginger and garlic in a food processor or finely chop and combine. Add tamari sauce and olive oil. Pour over salmon and marinate for 3 to 5 minutes.
Place frying pan on a high heat and once very hot reduce heat and place salmon fillets on their skin and cook for approximately 3 minutes. Rotate fillets on every side every 3 minutes until cooked. Allow to stand for 1 minute and serve with Red and Green Salad.
Red and Green Salad
50gms of salad greens
1 roma tomato diced
12 pitted kalamata olives sliced
1/2 a ripe avocado diced
6 slices of tinned beetroot diced
a splash of red wine vinegar
a good squeeze of lemon juice
Method
Cut greens into smaller pieces. Add diced romas, sliced kalamatas, diced beetroot and diced avocado. Splash with red wine vinegar and add a good squeeze of lemon juice. Toss and serve with Ginger Salmon.
