
Spiced Apple Rice Pudding

This is one of my favourite dishes due to its simplicity and the fact that it takes so few ingredients to make. I like to call it a comfort food, especially when it's hot; others in our house call it breakfast. It has also been eaten cold from the fridge and is equally as comforting. Like all good dishes it is highly nutritious and tastes like comfort food should; so good you want more. It also makes a great after school snack.
Serves 4 (as a snack) Prep time 30 minutes
Ingredients
2 cups of filtered water
1 cup of brown rice
3 medium sized organic apples
2 cinnamon curls
Method
Place water in to a sauce pan and bring to the boil. Add brown rice and cinnamon curls and bring to the boil. Once the rice is boiling reduce to simmer and cook for approximately 25 minutes and until most of the water has been absorbed. Next core the apples and put them in a food processor and process until they are reasonably finely. I don't peel the apples as they add colour and more fibre to the dish. Mix apple through the rice and allow the apple to soften. Probably five to ten minutes on low - this allows the flavour to go through the rice. Remove the cinnamon curls and serve hot. Any leftovers can be refrigerated and served cold with unsweetened almond milk or your favourite allergy free milk.
