
Yuletide Hot Chocolate

This recipe is for all my visitors from the northern hemisphere. I know it's cold and nothing warms the heart, the body and the soul like a rich cup of hot chocolate. Well this recipe is rich and thick and it feels and tastes much naughtier than it really is. What it really is, is very nice especially for those of us with allergies. If you want to spread a little Christmas cheer, feel free to share this with your non allergic friends. I know my friends love it and yours will too.
Serves one Prep time: 10 (well worth it) minutes
Ingredients
1 dessertspoon of pure maize corn flour
1 dessertspoon of raw cacao powder
2 dessertspoons of coconut palm sugar
1 cup of Almond milk or (soy, rice, oat milk etc)
1 teaspoon of organic coconut butter
1/2 a vanilla pod scraped out.
Method
In a small saucepan combine cornflour, cacao powder and coconut palm sugar. Next add a small amount of the milk and mix into a smooth paste and slowly add all the milk until it is well combined. I use a whisk to ensure a smooth mixture. Place the saucepan on the stove on a low heat and stir with the whisk continually until mixture gently boils. Once the mixture has boiled remove from the stove top and mix in the coconut butter and the vanilla pod seeds. Whisk the mixture well and create some bubbles in the mix and pour into a mug. Serve and warm the cockles of your heart and your belly.
