Tropical Turkey Marinade

Christmas, Thanksgiving and New Years usually involve a dinner with family and friends and a turkey. Well this year it's gonna be a good one, turkey that is. This recipe will ensure that you never serve up dry turkey again. Not only will it smell fantastic but it will be magnificently moist with delicate flavours thanks to this delicious marinade. Be warned, once you serve up this turkey you will be expected to repeat its fabulousness again next year.
Prep time: 20 minutes
Ingredients
4 star anise
1/2 teaspoon of black pepper corns
2 large grapefruit or oranges
1 x 2 litre bottle of Golden Circle Tropical Juice (no added sugar)
1 large onion
1 teaspoon of cinnamon
1 teaspoon of Chinese five spice
6 cloves
1 x 3 cm piece of ginger
1 cinnamon stick
1 turkey 3.5 kgs - 5.5 kgs
Method
Rinse turkey and remove giblets. Place turkey in a large pot. Peel and chop onion into quarters and chop ginger into 4 or 5 smaller pieces, add to the pot. Chop grapefruit or oranges into quarters and squeeze into the pot. Place the fruit into the pot unpeeled - the peel adds flavour. Add the rest of the dry ingredients, be sure to snap the cinnamon stick for extra flavour and finally pour over the Tropical fruit juice. Ensure that the turkey is covered by the liquid. You can add extra juice or a cup of water if your turkey is too far above the liquid. Cover and store in the fridge for 2 days. When you are ready to cook the turkey remove from the liquid and pat dry. Stuff with Pear, Cranberry and Pistachio Stuffing and cook for the recommended time - usually 30 minutes per 500g and add an extra 20 minutes for the stuffing. Your oven should be approximately 180c or 160c fan forced.
