Quick Chicken and Kale

This meal was thrown together in about 20 minutes and eaten very very quickly. I like to put a lot of vegetables in the main meal especially those that fill the belly and benefit the body; this dish does both. I'm currently experimenting with kale, it is a wonderful vegetable and is also versatile and a nice addition to any meal. Kale really is a Super food; it's packed with vitamins K, A, and C, iron and has more calcium than milk it's also kind to your liver. This is one dinner you your taste buds and body will enjoy, it is a big favourite in our house and I'm sure it will be in yours too. Enjoy.
Ingredients
500 grams of chicken mince
1 large onion
1 medium sweet potato
2 large wombok cabbage leaves
1 large kale leaf
2 tablespoons of corn flour
1/2 cup of water
1 tablespoon of Tamari (wheat free)
1 1/2 teaspoons of chicken stock
ground black pepper to taste
Celtic salt to taste
Fresh walnuts to garnish (optional)
2 teaspoons of olive oil
Method
Put olive oil in a large pan and heat. Next peel and dice the onion and place in the pot to saute. Peel and dice the sweet potato and add to the pot. Stir and cook for about 3 minutes. Add the chicken mince and cook for approximately 10 minutes. Add the Tamari, chicken stock and Celtic salt and pepper. Mix the corn flour with the water and pour over the chicken, sweet potato and onions. Mix well and allow to thicken; if mixture is too thick add more water.
Finely slice the cabbage and add to the pot and stir. Next finely slice the kale and add to the pot; stir in and remove from the heat.
Crack open the walnuts and sprinkle over the top of the dish and add a little finely chopped kale. Serve hot.
