
Coconut Almond Brownies

Introducing the not so naughty brownie. This exquisite parcel of chocolatey goodness has got to be one of the easiest recipes to make. In our house it never gets cold and disappears faster than you can say yum. Congratulations, you just found a new guilt free chocolate fix. Remember to save a piece for the kids... but only if they see the dirty dishes.
Prep time 45 minutes Serves 10
Ingredients
1/3 cup raw cacao
1/3 cup coconut flour
1/2 teaspoon Bicarb soda
1 cup coconut palm sugar
100g cold pressed coconut butter
3 free range organic eggs
2/3 cup slivered almonds
Method
Place raw cacao, coconut flour, bicarb soda and coconut palm sugar in a mixing bowl and combine well. Whisk the eggs in a separate bowl and add to the dry mixture. Next place coconut butter in a saucepan and melt over a low heat. Once melted remove from heat and allow to cool for 5 minutes. When cool add to the Brownie mixture and beat until the coconut oil is completely mixed in. Fold the slivered almonds and place in a lined baking dish.
Place in a warm oven 160c or 150c fan forced for 35 to 40 mins. Remove from oven and allow to cool. Slice into squares and enjoy.
