The Pick Me Up Slice was designed with us allergic folk in mind; it has plenty of antioxidants, vitamins and minerals courtesy of the raw cacao powder and cold pressed coconut butter, protein and slow release carbs in the form of quinoa and LSA or almond meal but it really is a yummy slice. Ingredients
1 cup quinoa flakes
1 cup almond meal
2 tabs raw cacao powder
2 tabs coconut oil
15 fresh dates
2 tablespoons of water
¼ cup of cranberries
Method
Place quinoa flakes, almond meal and raw cacao powder into a food processor and process until the quinoa flakes are fine and all the ingredients are mixed well. Pour these ingredients into a mixing bowl.
Next pit the dates and add them to the food processor along with the cranberries and 4 tablespoons of the quinoa mixture. Process all the ingredients until they are well combined. Pour the contents into the bowl with the quinoa mixture and add the boiling water and mix well. Place the coconut butter into a small saucepan and put on a low heat on the stove top until it is melted. Mix in with the quinoa and date mixture until well combined and it holds together. Press into a slice tin and place in the freezer until set, about 1.5 hours. Cut into squares and serve as a snack.
