In the Southern Hemisphere we are currently in spring and moving into summer. We have also started daylight savings. Now whilst I enjoy the longer days, I have to admit things start to become frantic as we move toward the pointy end of the year. I find myself trying to fit more into an already full day. And like most people, with summertime comes the feelings of guilt or you are plagued by thoughts that you should do more exercise. In our house that constitutes walking the dog twice a day and carrying very large watermelons around the green grocers. That gets my arms looking good but I have yet to master the squat with said watermelons and I'm not sure that I really want to. The upside to Spring/Summer is all the beautiful seasonal fruit and vegetables; the downside less time in the kitchen to prepare meals. Now don't get me wrong I love a good salad but sometimes you (and I) want a quick meal that is nutritious, allergy free and really looks after the taste buds. Fortunately for you I have already spent the time in the kitchen and created the very delicious Spicy Jap Pumpkin with Bean Vermicelli. This dish is a little sweet, a little spicy, enough to fill hungry tummies and good for you. It is also vegetarian and can be a side dish instead of the main meal. This meal is my go to on week nights after sport or when you need a meal in a hurry.
